You did not include the Intel graphics driver version you are using, so I may be pointing you to the same driver you've been using.
The new Kaby Lake processor graphics for the i7-7700K is HD 630.
Before I start, did you clear the UEFI/BIOS fully after you installed your i7-7700K? That means not only using the clear CMOS jumper on the board, but also removing the battery from the board at the same time to clear all of the memory used by the UEFI/BIOS. The battery must be left out at least several minutes to allow any residual power to dissipate. I cannot guarantee that alone will fix your issue, but will at least cause you to start fresh.
Next, did you install the latest INF files and IME software from your board's download page? They are dated shortly after your board's 7.10 UEFI version. Unless Windows 10 update installed the latest INF files after you installed the i7-7700K, the appropriate files were not installed when (if) you ran the INF file installer when your Skylake processor was in the board.
The specs for the i7-7700K state it supports up to three monitors.
I checked into the Intel graphics drivers available from Intel's website. Just in case you are not aware, any and all drivers for specific hardware like Intel processor graphics are exclusively provided by Intel. Mother board manufactures don't provide drivers they have written themselves. They are just as dependent upon the manufacture of the hardware for drivers as we are.
Every driver download page Intel has for their drivers has Read Me and Release Notes files. The Read Me files normally contains the processors and OS versions that are compatible with the driver. The processor compatibility is generally that of the entire processor generation.
Kaby Lake CPUs are classified as the 7th Gen Intel® Core??processor family. That is what we must find in the Read Me file of a driver version to know if it is compatible with the i7-7700Ks HD 630 graphics.

Feel free to search yourself, but I found only two graphics driver downloads that includes 7th Gen Intel® Core??processor family in the Read Me file. They are versions 21.20.16.4542, and the 21.20.16.4552 Beta driver:

You can see that the first driver is the same version supplied on your board's download page. That leaves the Beta driver, if you care to try it.
Your problem most likely is a driver issue, since we have all of one official (first) version to work with. That you also lost audio over the DVI connection is another hint that it is a driver problem. I have an i7-7700K, but with a different board, whose integrated graphics outputs don't match yours. I use a video card, and testing the graphics with my Z270 board may not be identical to yours. We might be waiting for a VBIOS update from Intel too.
You can try ASRock support too, but I don't know what else they could do for you.
